In a large stockpot, drizzle olive oil. Add onions and sauté over medium-high heat for 3 minutes.
Add ground turkey and garlic and continue cooking 8 to 10 minutes or until turkey is cooked through. Drain excess grease.
Add sweet potatoes, tomatoes, bouillon, and water. Rinse tomato can with 1/2 cup water and add water to the pot.
In a separate bowl, mix all spices, then add to the pot, stirring thoroughly. Reduce heat to a simmer. Cover pot and cook 45 minutes, stirring every 10 minutes. Check that sweet potatoes are tender enough to easily put a fork through before serving.
Top with corn chips (or pretzels), cilantro, and sour cream, if desired.
