Snap Pea and Apple Salad

  • 1/2pound radishes(sliced into thin rounds)
  • 3 medium Crispin or Shizuka apples(sliced thin)
  • 1/2pound sugar snap peas(some chopped, some split open)
  • 1/4cup fennel bulb(sliced thin)
  • 4tablespoons goat cheese
  • 2tablespoons fennel fronds(chopped)
  • 1/4cup olive oil
  • 1/4cup apple cider vinegar
  • 1/4cup water
  • 2tablespoons honey
  • 1/4teaspoon salt
  • 1/4teaspoon pepper
  1. Loosely arrange radish slices, apple slices, sugar snap peas, and chopped fennel on serving plates. Top with crumbled goat cheese and fennel fronds.
  2. In a small jar with a lid, shake or whisk olive oil, vinegar, water, honey, salt, and pepper together. Pour dressing over salads.
  3. For a milder flavor, marinate salad with the dressing overnight. Serve with focaccia bread (optional).
