Overnight Pumpkin Spice Oatmeal

  • 2cups steel-cut oats
  • 2cups milk
  • 1cup canned pumpkin
  • 2teaspoons vanilla extract*
  • 2teaspoons pumpkin pie spice
  • 1/8teaspoon salt
  • additional milk(as needed)
  1. Mix together all ingredients in a large container. Cover with a lid and store in the refrigerator overnight.
  2. In the morning, add more milk for desired thickness. When ready to eat, keep oatmeal cold or warm it up in microwave for 1 minute per serving.
  3. Suggested toppings: banana slices, dried cranberries, and pepitas.
