Ingredients
  • 1 cup milk
  • 2 tablespoons cornstarch
  • 1 lemon (zest and juice)
  • 1/3 cup low-sodium soy sauce
  • 1 tablespoon honey
  • 1/4 teaspoon hot pepper flakes
  • 2 tablespoons unsalted butter
  • 1 pound boneless beef grilling steak (cut into strips)
  • 6 cups broccoli (cut into pieces)
  • 1/4 cup chopped red pepper
  • 2 tablespoons grated ginger
  • 2 cups cooked rice

Instructions
  1. In a bowl, whisk a little milk into cornstarch to make a paste. Whisk in remaining milk, lemon zest, soy sauce, honey, and hot pepper flakes. Set aside.
  2. Melt butter in a large skillet over medium-low heat. Add beef and stir-fry for 3 minutes or until browned. Pour milk mixture over top. Cook 15 to 20 minutes, until beef is tender and sauce has thickened.
  3. Add broccoli, red pepper, and ginger to skillet. Cook another 5 to 10 minutes until broccoli has reached desired tenderness.
  4. Add lemon juice and serve over rice.
