Ingredients
  • 10 ounces shredded carrots
  • 1 cup crushed pineapple (drained)
  • 1/2 cup golden raisins
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons honey
  • 1 tablespoon grated ginger
  • 2 tablespoons lemon juice
  • pinch salt
  • 6 cups fresh spinach

Instructions
  1. Shred carrots with a food processor attachment or a peeler.
  2. Combine all ingredients except spinach. Stir well and chill for a few hours.
  3. Store carrot mixture and spinach separately and assemble when ready to eat.
