Ingredients
  • 4 chicken breasts (approximately 1 pound)
  • 1/2 cup flour
  • 1 lemon (zest and juice)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 3 tablespoons capers (drained)
  • 2 tablespoons chopped parsley
  • 1 lemon (sliced thin)

Instructions
  1. Pound the chicken breasts to about 1 inch thick. Cut breasts in half if needed to fit in the skillet.
  2. Combine 1/2 cup flour, lemon zest, salt, and pepper. Coat chicken with flour mixture, shaking off excess.
  3. In a wide skillet, heat olive oil over medium-high heat and cook chicken 4 to 5 minutes per side, or until cooked through. Set aside, covered.
  4. In the same pan, melt butter and add 2 tablespoons flour to create a roux. Whisk until smooth, cooking 1 to 2 minutes.
  5. Gradually whisk in chicken broth, lemon juice, white wine, and capers. Simmer 3 minutes to thicken. Add chicken and simmer 3 more minutes to reheat chicken and infuse flavor.
  6. Top with parsley and lemon slices. Serve over pasta or with favorite vegetables.
