Ingredients
  • 2 large sweet potatoes (peeled and sliced 1/4 inch thick)
  • 2 large oranges (sliced 1/4 inch thick, seeds removed)
  • 1/2 cup unsalted butter
  • 1/2 cup sugar
  • 2 tablespoons orange juice
  • 1 teaspoon vanilla
  • 1/4 teaspoon ground nutmeg

Instructions
  1. Heat the oven to 400 F. In a 9 x 13-inch baking dish, layer potato slices, overlapping slightly. Top evenly with orange slices.
  2. In a small saucepan, melt butter and sugar over medium heat. Stir in orange juice and vanilla. Immediately pour over potatoes and orange slices. Cover dish with aluminum foil and bake 30 minutes.
  3. Uncover and bake an additional 20 to 30 minutes more, or until potatoes are tender and browned, spooning juices over oranges halfway through uncovered baking time. Sprinkle nutmeg over top and serve warm.
